Today I’m showing you a yummy recipe me and my friend Markus made last weekend!
Since he has a pretty amazing kitchen, of course I had to take advantage of it, that’s what friends are for, right?
Jokes aside, he does not only have an awesome kitchen, but also pretty neat cooking skills and this recipe was his find, so I cannot take credit!
But I can take credit in cutting up the tomatoes and paprika!!! I don’t actually know how much we used, I only know it was two different types of tomatoes and three bell peppers (the picture above only shows the tomatoes and the red bell pepper), one red onion and some garlic teeth. You chop them all up, put them in an oven platter and put it in the oven.
While the veggies are in the oven, you get the chicken thighs and season them. Then you fry them with the skin part down for three minutes in a pan with some oil and then turn them around, both sides should be brown by the time you put them in the platter with the veggies.
This was Markus’s task, since I am NOT good at anything involving hot oil.
After the meat is put in the oven, you add some white wine to the pan where the meat was fried and then some chicken broth and wait for it to simmer. After it’s gotten down to half the amount it originally was, you dump the whole liquid into the platter and just wait.
After about 20 to 30 minutes it should be ready! We didn’t actually set a timer, we kinda just checked it (ok…Markus did…) and when it got out it smelled even more amazing that it looked!
I had never tried a recipe like this and I must say I was pleasently surprised! It’s a very yummy way for me to eat bell peppers, which is something I don’t eat as often as I’d liked. The tomatoes gave the dish an extra sweetness and the meat was just heavenly cooked!
I think this is a quick and extremely easy recipe to make, that is not only yummy but also healthy!
