I love to make new things with vegetables and the more colorful the food, the better!
A while ago I didn’t know what to do for dinner and decided to get creative with what I had on hand in the fridge!
What you need:
- Olive oil
- Onion and garlic
- Veggies (I used carrots and zucchini, but you can use whatever you like).
- Spices (I used a curry mixture Markus got a while ago)
- Some cream or yogurt (don’t forget to take it out of the fridge so it isn’t as cold)
Cut the veggies however small you want for them to cook well.
Get a pan, put some olive oil in it and add the onions. Once they start to get almost transparent you can add the garlic and let the flavor come out for a bit, you don’t need long. Afterwards add the veggies and start seasoning – I put some salt first and then started seasoning with the curry mixture.
At this moment you can start making the rice, simple white rice.
Once the veggies are done you can slowly add the yogurt. I forgot to take it out of the fringe, so it ended up crumbling instead of getting creamy. Nonetheless, it was yummy! You can also season it more, if you feel it is necessary.
As I mentioned above, the yogurt crumbled up instead of staying creamy, but the taste was just as good!
I like these kind of dishes because they’re easy to do and taste amazing! Also, they’re healthy and home cooked, which is important!
