{Recipe} Chicken with humus

It’s no secret that I’m not the best cook out there. However, living without a kitchen for 3 weeks made me miss cooking and therefore want to try out new things in the cooking department! Whose recipe I tried out and what I thought is right below!

Vicky and Kathi from The Daily Dose posted this chicken humus recipe quite a while ago, but it was always on my to-do cooking list to try out. And what better time, than Markus’ birthday? Well, better said it was the second birthday dinner I made for him (what? It’s his birthday, I spoiled the man!) and it turned out even better than what I had thought it would! I did change the recipe a bit, seasoning the veggies before putting them in the baking sheet. 

What you need for this recipe is pretty simple: 

  • Chicken breasts
  • Humus
  • Veggies
  • A dash of olive oil
  • Spices

Yes, that’s pretty much it! You can use any veggies you want, I got eggplants (or aubergines), a zucchini, mushrooms and 1.5 paprika we had left in the fridge. Wash and cut the veggies into small bite-size pieces and season them with the seasoning you want to use, coat them with the olive oil and mix it all. Then take the chicken, wash it, season it with salt and pepper and set it in the baking sheet. Take the humus and spread it on the chicken and if you wish, use some more seasoning on top – I put some chicken seasoning on top of the humus. Then spread the veggies next to the chicken on the baking sheet and put it into the oven at about 200º for around 30 minutes. The original recipe said 230º for 20 minutes, but I decided to lower it a bit, so the vegetables wouldn’t burn too quickly. 

The smell was SO good!!! The chicken was tender, not dry at all and so tasty! The veggies were cooked through and had a lot of taste in them – the perfect dish! We both really enjoyed it and I must say this will be a dish we’ll definitely do more often. Especially since I’ve been on a humus craze lately – do you know it tastes good and is healthy? I’m obsessed!

It also made a very colorful plate – which I love, the colorful, the better! I like that this is easy to make and you can use the vegetables you want or have lying around. I think even with small potatoes in the oven it would taste amazing!
