Easy Recipe: quick Cheesecake

However you want to call it, everyone knows cheesecake and (almost) everyone likes it. But how easy is it to make at home?

I thought it was super hard to do on your own, but I was so wrong! Today I’m showing you how to make an easy and yummy cheesecake at home!


What you will need:

  • 6 egg yolks
  • 6 egg whites
  • 1 pinch of salt
  • 1 KG soft cheese or quark (we call it Topfen in Austria, it is similar to Philadephia cheese)
  • 2 bags of vanilla pudding powder
  • 300 gramm sugar
  • 50 gramm crumbs
  • 1 table spoon butter

Disclaimer: I have to confess something rather embarassing here. I wanted to make the cheesecake with half of the wet ingredients, so it wouldn’t be too big. The “problem”? I don’t know how to calculate things. (seriously, I’m hopeless!). So, I used 3 eggs (separated), 2x 250 gramm of soft cheese, 1/2 bag of vanilla pudding powder and then….I used the 300 gramm sugarYes…I know. BUT: my friend, her son and husband all loved it! Markus said it was too sweet, but he always finds everything too sweet.

Preparing it

Mix the crumbs with the melted butter. I used butter cookies, because I like the taste and consistency of them. I also used a bit more butter than they said and a the crumbs were definitely more than 50 gramm, but in this case it’s about how much or how high you want the base of the cheesecake to be. The mixture in a butter form or a form with baking paper and set aside. 

Mix the egg yolks with the soft cheese until they’re well combined. If you want to (I did it) you can also add a bit of vanilla essence. In another container beat the egg whites with a bit of salt and mix it softly with the cheese mixture. Then pour the mixture with the crumbs. 

Pre-heat the oven at 170ºC and bake the cake for about 50 to 60 minutes. You can play with the time or the temperature here, you need also to know your oven. I started at 150ºC and it turned our pretty well. When it is done, take it out and let it cool. When it is cooled down, dust with icing or powder sugar.

Bonus: I also made a blueberry “sauce”. I just used blueberries and sugar, put both in a pot and stirred while it heated up. I have to say, this is also feel thing – I just used two table spoons of sugar and stirred until the consistency was what I wanted it to be.

The whole preparation took about 10 minutes, so it is pretty realistic to say this is a pretty quick recipe to make! I made it spontaneously for a brunch where my friend and her family visited us and everyone loved the cheesecake.

    Easy, without doubt, but if you had used only 150 grams of sugar, it would be even faster! Ah, ah, ah…!

    OMG Rosie this looks so good! I don’t eat dairy anymore- growing up cheesecake was my favorite thing though! These photos make me want to try this recipe! So beautiful!
